Before freezing

Freeze only suitable, properly stored ham when its instructions allow it. Check format, date and label. Freezing can change texture and aroma; it is usually unnecessary for a whole ham consumed regularly. [1]

Prepare portions

Divide slices and cubes into packages for a tapa or recipe. Use food-safe packaging, protect from air and mark the date. For boneless joints, follow the producer first.

Maintain the cold

Freeze promptly without leaving ham at room temperature for hours, and avoid temperature fluctuations. Do not invent a universal number of months: it depends on product, packaging and instructions. Freezing does not restore poorly stored food. [2]

Thaw in the fridge

Thaw while protected in the fridge, separate from other foods, not on the counter. Use the portion according to its label and avoid repeated refreezing. Afterwards, briefly temper only what you will serve. [2]

When not to freeze

Do not freeze to rescue a product with an unusual smell, swollen or damaged packaging, lost vacuum or an uncertain cold chain. Consult the producer or discard it if deterioration is possible. [1][2]
