Whole ham, boneless joints and slices need different care. Follow the format and label.
Whole ham
Keep an unopened whole ham in a clean, dry, cool, ventilated place, away from direct light, heat and strong smells. The Consortium suggests 12–20 °C for its whole hams. Avoid stacking and use breathable protection. [1]
Protect the cut surface
Remove rind and outer fat only from the area you will carve. Protect the surface with clean fat from the ham and a clean cloth. Remove a thin outer slice if it dries; do not add oil to hide it. [1]
Boneless joints and slices
Refrigerate opened joints and slices according to the label. The Consortium publishes 2–10 °C for these formats, but the manufacturer’s specific instruction takes priority. Protect joints with food-safe film and slices with a suitable container. [1]
Serve without excessive chill
Take out only the portion you will serve and let it lose its intense chill while protected. Do not leave it in sunlight or for hours in a warm room. Arrange slices in one layer without piling them up.
When not to eat it
Follow package dates and instructions. If there is an unusual smell, swollen package, damage or loss of vacuum, do not hide the problem: consult the producer or discard it. Keep hands, knives, cloths and surfaces clean. [2]
